Hawthorn Production Processes
Four processing routes developed for dried ingredients, freeze-dried products and consumer-ready hawthorn snacks.
From Fresh Fruit to Buyer-Ready Formats
The appropriate process depends on the target product, moisture specification, texture, application and destination-market requirements. Final specifications are confirmed for each order.
Air Drying
Gentle clean-air dehydration for conventional food-grade dried hawthorn ingredients.
Low-Temperature Drying
Controlled drying for specification-sensitive food, organic and medicinal-grade programs.
Vacuum Freeze-Drying
Low-temperature sublimation for crisp slices and pitted whole fruit with low residual moisture.
Confectionery
Pulping, concentration and forming for fruit leather, rolls, strips and sandwich snacks.

1. Air Drying Process
Clean, ventilated air gradually removes moisture at moderate conditions. This route is intended for food-grade hawthorn rings and sliced ingredients where natural texture and brewing performance are important.
Typical Flow
Fruit selection → purified-water cleaning → secondary sorting → pitting and slicing → tray loading → ventilated air drying → moisture balancing → color sorting → final inspection → sterilization → packing.
- No sulfur fumigation specified for sulfur-free programs
- Moisture and appearance confirmed by agreed specification
- Suitable for tea, beverage and food-processing supply chains
2. Low-Temperature Drying
A closed, light-controlled drying route uses staged temperature and humidity control. The supplied process document specifies a typical operating range of 45–55°C, subject to product and batch requirements.
Typical Flow
Raw material selection → controlled cleaning → fine sorting → pitting and slicing → protected tray loading → staged low-temperature drying → moisture testing → grading → final inspection → sealed packing.
- Designed for controlled color, dryness and batch consistency
- Applicable to food-grade, organic and medicinal-grade programs
- Product claims and test documents confirmed per contract

3. Vacuum Freeze-Drying
Prepared hawthorn is rapidly frozen before moisture is removed by sublimation under vacuum. The route supports crisp slices and pitted whole fruit intended for tea, cereal, bakery and premium snack applications.
Typical Flow
Fine fruit selection → cleaning → pitting or slicing → tray arrangement → rapid pre-freezing → vacuum sublimation → secondary drying → controlled recovery → screening → metal detection → moisture-protective packing.
- Documented pre-freezing range: approximately −35°C to −45°C
- Target moisture can be discussed to meet buyer specifications
- Moisture-barrier packaging is essential after processing
4. Hawthorn Confectionery Process
Fresh fruit is softened, pulped, filtered and concentrated before being formed into sheets, rolls, strips or layered sandwich formats. Formula and texture are developed against the buyer’s brief.
Typical Flow
Cleaning and pitting → pre-cooking → pulping → fine filtration → formula preparation → vacuum concentration → sheet forming → controlled dehydration → cooling → cutting, rolling or layering → sterilization → inspection → packing.
- Original, reduced-sugar and no-added-sucrose development options
- Shape, thickness, firmness and filling can be reviewed
- Bulk and retail packaging programs available for evaluation

Quality Controls Across the Process
Incoming Material
Appearance, maturity and agreed safety indicators are reviewed before production.
In-Process Control
Slice dimensions, temperature, time and moisture are monitored for the selected route.
Finished Product
Final sorting, foreign-material control, packing and order documentation are confirmed before shipment.
